Welcome back to the second edition of Adventures in the Kitchen series (Check out the first blog here: Adventures in the Kitchen: Bake and Save Chicken)! I have a lesson to introduce to you today that I am not exactly pleased with.  Sometimes, when cooking, we can start out with the best of intentions and end up with something that is just so, so terribly wrong.  And that my friends, is what I experienced.

I started out with the best of intentions, surfing through the recipes on my Pinterest for what I was hoping would be the next great and healthy snack; baked and seasoned carrot sticks.  Now do not get me wrong, I love my veggies. But I definitely do not live in a place called Hidden Valley where children always eat their vegetables. In my attempt to flavor up the carrot, which also happens to be my favorite veggie, I crashed and burned – metaphorically and literally.

I placed the carrots on a cooking sheet and poured a small amount of olive oil over them. After baking them for about 15 minutes, I took them out of the oven, poured a little ranch seasoning over them and put them back in the oven for about 5 minutes.  Well, as my sister says, not setting a time makes cooking a game, a game that I fail at. I am sure that this is something you have all experienced, and if you have not, please humor me.

For those like me who love carrots and ranch, you can understand that I started out with great intentions but failed miserably. And now this becomes my challenge to you! Adventures in the Kitchen: Bake and Save Chicken

The first semester is almost over and I have spent all my time either at school, work, or in one of my new favorite places – the kitchen. I don’t know about all of you, but before I started college, I did not do a lot of cooking. I baked cookies, cakes, and brownies courtesy of the wonderful Betty Crocker’s mixes, but my mother did most of the cooking. I am sure that most of you are in the same, or at least a very similar boat. I have decided to start writing this series, Adventures in The Kitchen, to teach simple, healthy, and delicious meals for college students on the go! Let’s begin with the first recipe!

Bake and Save Chicken

Step One:

Buy boneless, skinless, chicken breast either frozen or from the meat department at your local grocery store. Then pick out a marinade for the chicken. My favorite happens to be balsamic vinaigrette.

Step Two:

Preheat the oven to 450 degrees. Put the chicken in a bag and pour about half the bottle of marinade in the bag. Let the chicken sit in the marinade for about half an hour.

Step Three:

Get out a casserole or any oven safe dish. Place the chicken in the dish once the half hour of marinating is up and the oven is preheated. Bake the chicken for about 10 minutes. After the first 10 minutes, check the inside of the chicken by cutting it down the center. If there is any pink, place it back in the oven for another 5-10 minutes.

Step Four:

Gobble it up! Now think about this; if you buy the large bag of chicken and make the whole thing now, you can save it in the fridge or the freezer to eat later! Saves time and ensures that you will eat at least one healthy meal a day!

Trail Mix: Not Just For Hiking

Whether you’re stuck on campus for your long day of back-to-back classes, or just hungry and need a snack, trail mix is a simple treat that is tasty, quick to prepare, and packed with nutrients. Nuts are high in protein and antioxidants, seeds provide several minerals such as magnesium and zinc, and both of them are loaded with the healthy fat that keeps your skin and hair healthy.

Trail mix can be made by mixing any of the following together:

Nuts: This includes peanuts, almonds, cashews or walnuts.

Granola: You can buy straight granola in the bulk section of the grocery store, or look in the cereal section for granola with dried fruit and other sweeteners.

Dried fruit: This can be as simple as raisins or be expanded to dried apples, cranberries, or my favorite, mango.

Seeds: Sunflower seeds, pumpkin seeds, and flax seeds can add both taste and nutritional value to your trail mix.

Other not-so-nutritious stuff that make trail mix taste really really good but isn’t necessarily good for you: M&M’s, anyone? If you need something sweet in your mix, dark chocolate chips provide more of those healthy fats while still satisfying your sugar cravings. In moderation, you can also add crackers, pretzels, popcorn, yogurt-covered fruit or white chocolate chips.

Any combination of these items is delicious and nutritious!

Keep it cheap and easy with these mouthwatering dishes for a college student’s budget

College is all about the cheap and easy. We students are usually on the hunt for better bargains at bars, easier classes, and quicker meals to cook. With the right recipes and some kitchen savvy, you can eat great even on a student’s budget. Here are some easy, cheap, and especially delicious recipes perfect for the student saver. They will make your taste buds jump for joy and save your wallet a few dollars along the way.

Breakfast Burritos

For a quick grab-and-go breakfast, you can make your own breakfast burritos and freeze them the night before. You will need:

12 flour tortillas
6 eggs, scrambled
6 potatoes, diced and fried
grated cheese
cooked and diced bacon or sausage (optional)
salsa (optional)

  • Scramble the eggs and fry the potatoes in a pan until they are golden brown.
  • Soften the tortillas,  and cook or fry up the bacon or sausage.
  • Lay out the tortillas and add the filling ingredients after mixing them together. Roll up, tucking the ends in first, and freeze the extras.

Beef & Broccoli Stir Fry Ramen

Using a staple food in every college student’s kitchen, make this extremely affordable dish a tad healthier with meat and tastier with flavoring that isn’t artificial.

1 package beef or spicy beef ramen noodles
2 cups water
1 lb. beef steak strips
2 tspn. oil
2 cups broccoli, cut up
1 tbsp. soy sauce
1/8 tspn. crushed red pepper (optional)

  • Cook noodles according to package directions and drain.
  • In skillet, cook brown beef and drain. Add oil, half of the seasoning packet, broccoli and onions.
  • Stir fry for five minutes. Add soy sauce and red pepper. Simmer for five more minutes. Serve over noodles, and slurp up!

Roasted Asparagus

Asparagus starts appearing in grocery stores around early spring, so stock up when you can! Roast this wonderful vegetable into a crisp, sweet delight.

1 lb. asparagus
2 tbsp. olive oil
½ tsp. salt

  • Clean asparagus and take each stalk in your hands. Bend the stalk and the asparagus will naturally snap at the point where it becomes tough.
  • Place the tips on a heavy baking pan and toss with the olive oil.
  • Roast at 425 degrees F for 5-10 minutes until the asparagus is tender and begins to brown.

Microwave Peanut Butter Fudge

Not into baking? Don’t be afraid! This four-step recipe only requires two ingredients.

1 (16 ounce) can vanilla frosting
1 (18 ounce) jar peanut butter

  • Empty an entire jar of peanut butter into a mixing bowl.
  • Heat vanilla frosting in its container (remember to take off the foil lining first) in the microwave for about 60 seconds or until completely melted.
  • Pour the melted frosting in the bowl with the peanut butter and mix well.
  • Quickly pour the mixture into a 9×13 pan, allow the fudge to set, cut into small squares and enjoy!
