3 Creative Lunches For The Working Student

For those who are working this summer, lunch is usually one of two things: either you are brown bagging or you are going out to lunch every day. Neither of these options are ideal. The sandwich you made in the morning is soggy by lunch, and going out to eat every day can really empty out your wallet! That’s why I like to make my own lunches the night before and get a little more creative than a sandwich. Here are my top lunch ideas that are quick, easy to make, and taste great!

1. Veggie Pasta

Pick your favorite pasta (my favorite is penne) and a few veggies and you’ve got yourself a lunch. I fry up some garlic, a handful of sliced mushrooms, one chopped bell pepper, and a teaspoon of olive oil. I mix the cooked pasta in when the veggies are soft and as a finishing touch I sprinkle some Parmesan cheese on top.

2. Salad

There are many different kinds of salads, but I prefer a handful of baby arugula and baby spinach. I toss in some fresh mozzarella with the juice of one lemon mixed  with a teaspoon of olive oil. This is very easy to do and tasty to boot!

3. Pita Pocket

If you prefer a sandwich for lunch but are getting tired of the same regular sandwiches, switch it up and make your sandwich with pita. I like to toast my pita pockets first, then fill it with my favorite sandwich fillings: tuna, lettuce and tomato, or ham and cheese. Toasting the pita is a lot better than a normal sandwich and the bread doesn’t get soggy like normal sandwich bread does.
